) l* b1 B# e) o( [+ D& ~( |A good, basic oatmeal cookie-thin, crisp, and slightly coarse with oatmeal and nuts.* h7 Y1 l, J8 X' [+ J
, @% G. L$ D* {: i6 g16 tablespoons (2 sticks or 1 cup)butter, softened
& x. y! n1 m3 X8 y1 p1/2 teaspoon nutmeg(optional)* S! e' P$ x5 |, e# r7 D
1/2 teaspoon salt$ x$ D8 q8 G8 }1 i" a8 |% A
1/2 cup brown sugar
! M# C. V! r) g. m) e1/4 cup granulated sugar 6 F: ^6 q [1 {2 p6 k# N, L# S
2 eggs, beaten

3 1/2cups uncooked oatmeal (not instant)

1/2 cup chopped nuts(optional)9 K7 \+ }' d% _* i4 Q6 X
" l8 t8 L& b% o* L7 v. }) d' U% K Combine the butter, brown sugar, 1/2 cup of the granulated sugar, and beat until well blended and creamy. Add the eggs and beat until light and fluffy.+ d! B X4 J) }! t0 d3 u4 U1 o
Stir and toss together the flour, nutmeg, salt, and baking soda and add them to the first mixture, beating until completely mixed. Add the oatmeal and optional nuts, and stir just until mixed. This is a very soft dough, and although you can form and bake the cookies at this point, the dough will be easier to handle if you chill it for about 2 hours.
& ~: c/ J! g+ t% }' d Preheat the oven to 350°F and get out some cookie sheets about 10 to 15 minutes before you form the cookies.% e, ~( B+ z( e6 z
Put the remaining 1/2 cup granulated sugar in a small, shallow dish. Take tablespoon bits of the dough and roll them into balls between the palms of your hands, then roll them in the sugar. Place on the ungreased cookie sheets, leaving about 11/2 inches between. Using your moistened fingertips or the bottom of a wet glass, flatten each cookies into a disk about 1/3 inch thick and 2 inches across.

These have a very nutty, wholesome flavor. Spread the oatmeal out on two large, flat baking sheets and toast in the preheated 350°F oven for about 15 minutes, stirring occasionally, until light brown. Omit the nutmeg and proceed as directed in the recipe.

Coconut Oatmeal Crisps. ' m( A' ^- m1 ]# v# v) C
Add 1 cup shredded, unsweetened coconut along with the oatmeal(if only sweetened coconut is available, rinse under cold running water to remove some of the sugar, then dry on paper towels before using.) |
