Beef with Broccoli

Beef with Broccoli

Ingredients:7 E% ^- L* }" g
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, o$ _2 ?0 x3 g/ p7 a5 D
" m% r( G# K: z- k7 E
Marinade for Beef: ) g3 {9 Q4 f1 v# R/ [* j; }
1 egg ) h& x# b, G1 T) ~4 r% |
1/3 tsp (1.5 mL) salt
' X+ b, H6 g  o% p+ J/ o$ \1 d  L, ?1 Tbsp (15 mL) cooking wine. `" D7 a& o  J8 _3 Z% O3 y
1 Tbsp (15 mL) cornstarch
% d, \% P" v* z( \) w# _2 Tbsp water
) a% s* a- v3 ~/ A# x! |" M/ P. m# S$ q& v- F
1 1/2 Tbsp (20 mL) oil
1 d5 ~) C/ L& u! n! z7 e! M- T
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  X- H% p, g8 h0 M  F' F1 cup (250 mL) cooking oil
7 I5 b5 j0 @, x2 S, d2 1/2 Tbsp (30 mL) oyster sauce! L' w( w4 q9 V
2 Tbsp (25 mL) light soy sauce
/ y+ S7 k! E+ W, _8 y. V3/4 Tbsp (10 mL) dark soy sauce
! {- I5 v  t6 s% F8 E4 ?$ ]1 Tbsp (15 mL) sugar
. e; K; ?0 j2 La few drops of sesame oil: `0 C2 c$ V( D0 a# N
2 cloves garlic, crushed# h# p9 f) `3 \/ N2 W0 P7 X, F
1/2 cup (125 mL) chicken broth
1 v3 G& Z1 G2 W+ m; \9 G6 Y2 Tbsp cornstarch (if desired)( w# i# I0 r5 y1 l5 L

Directions:1 r3 k, U' A, y. {- M$ ?$ o% x" y
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. , r" D5 H: _! Y- T
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.! M0 t0 ]0 }+ K6 M& I3 R& e& {
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
: a2 ^" _' Q3 `3 {, L8 P/ dHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.9 O9 T1 _& X# \' O& Y6 L

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
